Step 1: Cut the gold doilies into small shapes and place over a plastic ring top. Use a toothpick to make a hole in the bottom of the foil liner on each cupcake.
Step 2: Place the white sugar in a shallow bowl. Spoon 1/2 cup of the vanilla frosting into a small plastic resealable bag.
Step 3: Spread the top of a cupcake with a slight mound of vanilla frosting. Gently roll the top of the cupcake in the sugar to coat. Repeat frosting and sugar-coating with the remaining cupcakes.
Step 4: Snip a small corner from the bag with the vanilla frosting. Pipe a dot on top of a cupcake and attach a spice drop as a “gem.” Add other small candies around the top to look like fancy rings, and use frosting as a glue. Repeat with the remaining candies and cupcakes.
Step 5: Melt the chocolate chips in a small bowl, stirring frequently, until smooth, about 1 minute. Spoon into a small plastic resealable bag. Snip a small corner from the bag and pipe a dot of chocolate on the plastic ring with doily. Attach the cupcake by inserting the plastic ring tip into the opening on the cupcake liner. Place the assembly on top of a small glass to keep it upright while drying. Repeat with the remaining cupcakes and rings. For a quicker set, place in the refrigerator for 5 minutes until chocolate is set.
